As the summer holidays move into full swing and many of us enjoy some precious time off work, spending hours on end in a hot kitchen isn’t something that appeals to any of us. But that doesn’t mean that we can’t enjoy some great easy and light meals with friends and loved ones, and this month, the popular Limassol based chef, Roddy Damalis, is on hand to prove that summer cooking can be a real breeze!
Owner of the highly popular, Ta Piatakia (‘Little Plates’) restaurant in Limassol, the chef, television presenter and teacher has worked up a great reputation for dishing up food with contemporary Cypriot twist, reinventing classic recipes in unexpected and delicious ways!
Always imaginative and creative, he is also avid about using all things fresh and local, and will soon be presenting My Cyprus Insider readers four great recipes from his very own My Little Plates cookery book.
A real celebration of contemporary Cypriot cuisine, each week throughout the month of August, Roddy will be presenting one of his recipes, along with a special tip. Readers can look forward to baked seam bream with aromatic herbs, a roasted red pepper and feta dip, delicious salmon koupepia and more.
