In the summer months, there’s nothing better than a light and nutritious meal, that won’t leave you feeling lethargic for hours after you’ve eaten. And this week, Roddy Damalis has just the recipe in mind, with marinated sea bream that’s easy to cook and perfect with a crisp salad, grilled veggies or another side dish of your choice!





500g whole sea bream (gutted and cleaned with skin scored in 3 places)



¼ cup olive oil

¼ cup lemon juice

¼ cup water

2 cloves garlic (sliced)

3 bay leaves

½ cup fresh parsley (chopped)

1 teaspoon oregano (fresh or dried)


¼ teaspoon cracked black pepper





-Mix all the marinade ingredients in a bowl.


-Marinate for one hour in the fridge.


-Place fish in an ovenproof dish and pour marinade over, making sure that the bay leaves and herbs are in the gut too.


-Cover and bake in a pre-heated oven at 180ºC for 20 minutes, then uncover and bake for a further 10 minutes until golden brown and the flesh lifts off the bone easily.


-Pour the remaining pan juices over the top and sprinkle with fresh parsley.
